3 C. brown rice, Cooked (1 C.dry plus 2 C. water) or Wild rice, cooked (3/4 C. dry plus 2 ¼ C. water).
1 onion, finely chopped
2 stalks celery, finely chopped
2 slices whole-grain bread, crumbled, or ¾ C. cracker crumbs
1 C. cashews
½ C. water 2 t. parsley, finely chopped
1 ½ t. salt
½ C. raw walnuts, chopped
Make bread or crackers into crumbs, using blender or food processor. Pour into large bowl.
Grind cashews or other nuts finely in dry blender; add water and blend well to make “milk.”
Pour nut “milk” into bowl with crumbs and rice. Combine.
Add remaining ingredients into the mixture, combining well.
Press into unprepared 8”x8” pan and bake at 350 for 45 min.
